Ingredients
2 cups sweet peas (fresh or frozen)
1 tablespoon olive oil
1 tablespoon unsalted butter
1/4 teaspoon salt (or to taste)
1/8 teaspoon black pepper
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh mint
1 teaspoon chopped fresh dill (optional)
1 teaspoon lemon zest
1 teaspoon lemon juice (optional)
Instructions
If using frozen peas, rinse under cool water to separate, then drain.
In a medium saucepan, bring 1/2 cup of water to a simmer over medium heat.
Add the peas and cook for 3–5 minutes until tender and bright green.
Drain any excess water, then return peas to the pan.
Add olive oil, butter, salt, and pepper. Stir until butter is melted and peas are evenly coated.
Gently mix in the parsley, mint, dill (if using), and lemon zest.
Add a splash of lemon juice for extra brightness, if desired.
Taste and adjust seasoning. Serve warm or at room temperature.
Notes
This dish is fantastic served warm, but it’s also delicious chilled as a light pea salad.
Try adding crumbled feta or goat cheese for a creamy, tangy twist.
Fresh herbs work best, but dried can be used in a pinch—use about 1/3 of the fresh amount.
