Easy Peanut Butter Cookies – Quick & Simple

Ingredients

  • 1 cup (240g) creamy peanut butter

  • 1/2 cup (113g) unsalted butter, softened

  • 1 cup (200g) granulated sugar

  • 1/2 cup (110g) brown sugar, packed

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1 1/2 cups (190g) all-purpose flour

  • 1 teaspoon baking soda

  • 1/4 teaspoon salt

Instructions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.

  2. In a large bowl, cream together the peanut butter, butter, granulated sugar, and brown sugar until smooth and fluffy.

  3. Add the egg and vanilla extract, mixing until fully incorporated.

  4. In a separate bowl, whisk together the flour, baking soda, and salt.

  5. Gradually add the dry ingredients to the wet mixture, stirring until combined.

  6. Scoop the dough (about 1 tablespoon per cookie) and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.

  7. Use a fork to press a crisscross pattern on each cookie, flattening them slightly.

  8. Bake for 10–12 minutes, or until the edges are lightly golden.

  9. Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

  • For extra crunch, add 1/2 cup of chopped peanuts or chocolate chips.

  • If you prefer a softer cookie, slightly underbake them and let them cool on the baking sheet.
