Ingredients
1 cup (240g) creamy peanut butter
1/2 cup (113g) unsalted butter, softened
1 cup (200g) granulated sugar
1/2 cup (110g) brown sugar, packed
1 large egg
1 teaspoon vanilla extract
1 1/2 cups (190g) all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
Instructions
Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a large bowl, cream together the peanut butter, butter, granulated sugar, and brown sugar until smooth and fluffy.
Add the egg and vanilla extract, mixing until fully incorporated.
In a separate bowl, whisk together the flour, baking soda, and salt.
Gradually add the dry ingredients to the wet mixture, stirring until combined.
Scoop the dough (about 1 tablespoon per cookie) and roll into balls. Place them on the prepared baking sheet, spacing them about 2 inches apart.
Use a fork to press a crisscross pattern on each cookie, flattening them slightly.
Bake for 10–12 minutes, or until the edges are lightly golden.
Allow the cookies to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
For extra crunch, add 1/2 cup of chopped peanuts or chocolate chips.
If you prefer a softer cookie, slightly underbake them and let them cool on the baking sheet.
Store in an airtight container at room temperature for up to a week.
