How to Make the Best Frozen Burrito Casserole

Recipe Description:
This Frozen Burrito Casserole is an easy, delicious, and comforting meal that takes frozen burritos to the next level! Packed with seasoned beef, beans, cheese, and salsa, it’s a flavorful one-pan dinner that’s perfect for busy weeknights or meal prepping.

  • Total Time: 50 minutes
  • Yield: One 9x13-inch casserole

Ingredients

  • 6 frozen beef or chicken burritos

  • 1 cup salsa (mild, medium, or spicy depending on preference)

  • 1 can (15 oz) refried beans

  • 1 cup shredded cheddar cheese

  • 1 cup shredded mozzarella cheese

  • 1/2 cup sour cream (optional, for topping)

  • 1/2 teaspoon chili powder

  • 1/2 teaspoon garlic powder

  • 1/4 teaspoon cumin

  • 1/4 teaspoon salt

  • 1/4 teaspoon black pepper

  • 1 tablespoon olive oil (for greasing)

Instructions

  • Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish with olive oil or non-stick spray.

  • Spread a thin layer of refried beans over the bottom of the prepared baking dish.

  • Arrange the frozen burritos in a single layer on top of the refried beans.

  • In a small bowl, mix together the salsa, chili powder, garlic powder, cumin, salt, and pepper. Pour the salsa mixture evenly over the burritos.

  • Sprinkle the shredded cheddar cheese and mozzarella cheese on top of the burritos.

  • Cover the baking dish with aluminum foil and bake for 25 minutes.

  • After 25 minutes, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly and the burritos are fully heated through.

  • Remove from the oven and let it cool for a few minutes before serving. Optionally, top with sour cream and extra salsa.

Notes

  • You can use any variety of frozen burritos (beef, chicken, or vegetarian) to customize the casserole.

  • Add diced onions, bell peppers, or jalapeños to the salsa mix for extra flavor.

  • For a healthier version, use whole wheat burritos and low-fat cheese.

  • Serve with a side of Mexican rice or a simple salad for a complete meal.

  • If you prefer a spicier dish, add extra hot sauce or chopped jalapeños on top before serving.
