Ingredients
2 large croissants, sliced in half
4 slices of deli ham or turkey
2 slices of cheddar or Swiss cheese
2 large eggs
1 tablespoon butter
1 small avocado, sliced (optional)
1 handful of baby spinach or arugula
Salt and pepper, to taste
Optional condiments: Dijon mustard, mayonnaise, or sriracha
Instructions
Heat a skillet over medium heat and melt the butter.
Crack the eggs into the skillet, season with salt and pepper, and cook to your preference (scrambled or fried).
While the eggs cook, lightly toast the croissant halves in a toaster oven or on a dry skillet until warm and slightly crisp.
Place a slice of cheese on the bottom half of each croissant.
Layer on the ham or turkey, followed by the cooked egg, avocado slices, and fresh greens.
Add any desired condiments to the top half of the croissant.
Close the sandwich and serve immediately, warm and melty.
Notes
Swap out the meat for crispy bacon, smoked salmon, or grilled veggies for a vegetarian version.
Add a fried egg with a runny yolk for extra indulgence.
