Ingredients
4 boneless, skinless chicken breasts
1 teaspoon Italian seasoning
½ teaspoon garlic powder
½ teaspoon salt
¼ teaspoon black pepper
1 tablespoon olive oil
1 cup cherry tomatoes, diced
¼ cup red onion, finely chopped
2 cloves garlic, minced
¼ cup fresh basil, chopped
1 tablespoon balsamic vinegar
1 teaspoon olive oil
½ teaspoon salt (for bruschetta topping)
¼ teaspoon black pepper (for bruschetta topping)
½ cup shredded mozzarella cheese (optional)
Balsamic glaze, for drizzling
Instructions
Preheat your grill or stovetop grill pan to medium-high heat.
Season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.
Drizzle olive oil over the chicken breasts and rub to coat evenly.
Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).
While the chicken is grilling, prepare the bruschetta topping. In a bowl, combine diced cherry tomatoes, red onion, minced garlic, fresh basil, balsamic vinegar, olive oil, salt, and black pepper. Mix well and set aside.
If using mozzarella cheese, sprinkle it over the chicken in the last 2 minutes of cooking and allow it to melt.
Remove the chicken from the grill and let it rest for 5 minutes.
Top each chicken breast with a generous scoop of the bruschetta mixture.
Drizzle with balsamic glaze and serve immediately.

For a low-carb option, enjoy it as is or with zucchini noodles.
You can substitute chicken breasts with boneless chicken thighs for extra juiciness.
If you don’t have a grill, cook the chicken in a skillet over medium heat for the same time.
