  • Total Time: 25 minutes
  • Yield: 4 chicken breasts

Ingredients

  • 4 boneless, skinless chicken breasts

  • 1 teaspoon Italian seasoning

  • ½ teaspoon garlic powder

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon olive oil

  • 1 cup cherry tomatoes, diced

  • ¼ cup red onion, finely chopped

  • 2 cloves garlic, minced

  • ¼ cup fresh basil, chopped

  • 1 tablespoon balsamic vinegar

  • 1 teaspoon olive oil

  • ½ teaspoon salt (for bruschetta topping)

  • ¼ teaspoon black pepper (for bruschetta topping)

  • ½ cup shredded mozzarella cheese (optional)

  • Balsamic glaze, for drizzling

Instructions

  • Preheat your grill or stovetop grill pan to medium-high heat.

  • Season the chicken breasts with Italian seasoning, garlic powder, salt, and black pepper.

  • Drizzle olive oil over the chicken breasts and rub to coat evenly.

  • Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

  • While the chicken is grilling, prepare the bruschetta topping. In a bowl, combine diced cherry tomatoes, red onion, minced garlic, fresh basil, balsamic vinegar, olive oil, salt, and black pepper. Mix well and set aside.

  • If using mozzarella cheese, sprinkle it over the chicken in the last 2 minutes of cooking and allow it to melt.

  • Remove the chicken from the grill and let it rest for 5 minutes.

  • Top each chicken breast with a generous scoop of the bruschetta mixture.

  • Drizzle with balsamic glaze and serve immediately.

Notes

  • Serve with a side of garlic bread, pasta, or a fresh green salad.

  • For a low-carb option, enjoy it as is or with zucchini noodles.

  • You can substitute chicken breasts with boneless chicken thighs for extra juiciness.

  • If you don’t have a grill, cook the chicken in a skillet over medium heat for the same time.
